The Epices Roellinger warehouse is based in the 18th-century Maison du Voyageur, where I cooked for 30 years. Spices from the finest origins are dried, sterilized, roasted, ground, weighed, measured and mixed to obtain the O.R. powders that have become the signature of our marine and vegetable cooking.
